It’s true–every culture has their own version of fried chicken. In Hawaii, at every tailgating event, at every pot luck gathering, you will always find a platter of Mochiko chicken. Simply put, it is dark meat chicken marinated in soy, garlic, ginger, egg, and mochiko (rice flour), then deep-fried until crispy. In our version of it, we use gluten-free tamari, so more people can enjoy this namesake chicken of ours. Kids rave about Mochiko chicken, and it has actually garnered several awards in kids’ meal taste tests.
